South of France Bowl

Many moons ago I ate (and drank) my way through little towns along the southern tip of my favourite country in Europe, which is where today's recipe is born out of.

We can learn a lot from the southern French, and we can do so without having to travel all the way there (although I highly recommend it). I hope this bowl inspires you to enjoy the simple things in life, slow down and connect with more of what you love.

This is an adaptation of a Salade Niçoise with minor changes. It is gluten, dairy, and processed sugar-free as well as low FODMAP and perfect for both our Detox and Repair Phases of our 12-Week Gut Restore Program. 


South of France Bowl

Ingredients:

  • Arugula
  • French green beans, lightly steamed
  • Cherry tomatoes, halved
  • Consciously caught canned tuna, drained
  • Cilantro, roughly chopped
  • Red or fingerling tomato, cooked and cubed
  • Olives
  • Hemp hearts

The Dressing:

  • 2 parts olive oil
  • 1 part white wine vinegar
  • 1 egg yolk

Instructions:

Making this salad is all about being easy. All ingredients can be pre-washed for ease of prep.

  1. Take a beautiful bowl and put a large handful of arugula at the bottom.
  2. Place another handful of green beans, tomato, and hemp hearts in their own spot. Add half the can of tuna, a few sprigs of cilantro and about a palm full of the potato. Add 3-5 olives.
  3. Blend all ingredients of dressing in a blender and drizzle on top, with sea salt and fresh pepper.

Enjoy this salad with someone you love, someone you'd like to love or an old love who you've lost touch with for too long...
