Many moons ago I ate (and drank) my way through little towns along the southern tip of my favourite country in Europe, which is where today's recipe is born out of.
We can learn a lot from the southern French, and we can do so without having to travel all the way there (although I highly recommend it). I hope this bowl inspires you to enjoy the simple things in life, slow down and connect with more of what you love.
This is an adaptation of a Salade Niçoise with minor changes. It is gluten, dairy, and processed sugar-free as well as low FODMAP and perfect for both our Detox and Repair Phases of our 12-Week Gut Restore Program.
